Pesto Eggs
Ingredients:
- 2 tablespoons pesto
 - 2 large eggs
 - Salt and pepper, to taste
 - 2 slices of bread, such as sourdough, toasted
 
Instructions:
- Prepare the Pan:
- Warm a non-stick pan over medium heat.
 - Add the pesto to the pan and spread it into a thin layer.
 
 - Cook the Eggs:
- When the pesto starts to bubble, crack the eggs on top.
 - Season with salt and pepper to taste.
 - Cover with a lid and cook until the egg whites are set and no longer translucent, about 2-4 minutes.
 
 - Toast the Bread:
- While the eggs are cooking, toast the slices of bread.
 - Add any optional toppings to the toast if desired.
 
 - Assemble and Serve:
- Place one egg on each slice of toasted bread.
 - Drizzle any leftover pesto from the pan over the eggs.
 - Serve immediately and enjoy!
