Hawaiian Chicken
Ingredients:
- 2 teaspoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- Salt and pepper, to taste
- 1 red bell pepper, diced
- 15 ounces pineapple chunks, juice reserved and fruit separated
- ⅓ cup chicken broth
- ¼ cup soy sauce
- 2 tablespoons light brown sugar
- 1 garlic clove, minced
- 1 teaspoon ginger, grated
- ¼ teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch
- Sesame seeds, for garnish
- Green onions, chopped, for garnish
Instructions:
- Prepare the Sauce:
- In a bowl, combine the juice from the pineapple chunks (about 1 cup), chicken broth, soy sauce, brown sugar, minced garlic, and grated ginger. If you enjoy a bit of heat, include the red pepper flakes. Stir well and set aside.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper and add them to the skillet. Sauté for about 8 minutes, stirring occasionally, until the chicken is nearly cooked through.
- Add Vegetables and Pineapple:
- To the skillet, add the diced red bell pepper and cook for 2-3 minutes until softened. Follow with the pineapple chunks and cook for an additional 3-4 minutes.
- Add the Sauce:
- Pour the prepared sauce over the chicken, pineapple, and bell pepper. Stir to combine and allow the mixture to simmer for about 5 minutes.
- Thicken the Sauce:
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually stir this into the skillet until the sauce thickens to your liking. Cook for a couple more minutes to ensure everything is well combined and heated through.
- Garnish and Serve:
- Just before serving, sprinkle the Hawaiian chicken with sesame seeds and chopped green onions.
