Dill Buttered Carrots

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 teaspoons granulated sugar
  • 1 lb carrots, peeled and sliced on the diagonal into 1/4-inch thick pieces
  • 3/4 cup low-sodium chicken stock or water
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon fine salt
  • 2 tablespoons fresh dill, roughly chopped

Preparation:

  1. Melt Butter and Combine:
    • In a medium-sized pan, melt the butter over medium heat. Once melted, stir in the sugar until combined.
  2. Add Carrots and Seasonings:
    • Add the sliced carrots to the pan, tossing to coat them in the butter and sugar mixture.
    • Pour in the chicken stock, and season with black pepper and salt. Stir to combine.
  3. Cook the Carrots:
    • Bring the mixture to a boil, then reduce the heat to a simmer.
    • Continue cooking until the liquid has mostly evaporated and the carrots are tender, about 15 to 20 minutes.
  4. Finish with Dill:
    • Stir in the chopped dill and cook for an additional 2 to 3 minutes.
  5. Serve:
    • Serve the carrots warm and enjoy!
