One Pot Mac and Cheese

Ingredients

  • 1 lb cavatappi noodles, uncooked
  • 3 cups water
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 10.5 oz condensed cheddar soup
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese

Toppings

  • 8 Ritz crackers, crushed
  • 1 tablespoon grated Parmesan cheese
  • 1/2 tablespoon chopped parsley

Instructions

  1. In a large pot or Dutch oven, combine the uncooked cavatappi noodles, water, milk, salt, pepper, garlic powder, and onion powder. Stir well.
  2. Place the pot on the stove over high heat and bring the liquid to a boil, stirring every couple of minutes to prevent the pasta from sticking to the bottom.
  3. Once the liquid is boiling, reduce the heat to medium. Continue cooking and stirring every couple of minutes until the noodles are tender.
  4. Add the condensed cheddar soup to the pot and stir well.
  5. Remove the pot from the heat and add the shredded cheddar cheese, mozzarella cheese, and grated Parmesan cheese. Stir until the cheese is melted and fully incorporated.
  6. Sprinkle the crushed Ritz cracker crumbs over the top of the macaroni.
  7. Add the grated Parmesan cheese and chopped parsley on top.
