Italian Hamburger Soup
Ingredients
- 1 lb lean ground beef
 - 1 cup diced yellow onions
 - 2 tablespoons minced garlic
 - 28 oz diced tomatoes
 - 29 oz tomato sauce
 - 2 cups frozen mixed vegetables
 - 4 cups beef broth
 - 1/2 teaspoon salt
 - 1/2 teaspoon pepper
 - 2 tablespoons Italian seasoning
 - 6 oz small pasta shells
 - 1/4 cup fresh chopped basil
 
Instructions
- In a large pot or Dutch oven over medium-high heat, cook the ground beef and diced onions, crumbling the beef as it cooks.
 - Once the beef is browned, drain the grease from the pot.
 - Add the minced garlic and cook for 2 minutes, stirring frequently.
 - Stir in the diced tomatoes, tomato sauce, and frozen mixed vegetables.
 - Add the beef broth, salt, pepper, and Italian seasoning, stirring to combine. Bring the mixture to a boil.
 - Reduce the heat to medium-low and let the soup simmer, stirring occasionally, for 10 minutes.
 - Add the pasta shells and continue simmering until the pasta is tender, about 20-30 minutes.
 - If the soup is too thick, add additional broth or water to reach your desired consistency. Adjust salt and pepper to taste.
 - Remove the pot from heat and stir in the chopped basil.
