Twix Cookies

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • ¾ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup caramel sauce
  • 1 cup milk or semi-sweet chocolate chips

Instructions:

For the Cookies:

  1. In a stand mixer fitted with the paddle attachment, cream together the butter and sugar on medium-high speed until pale and fluffy, about a few minutes.
  2. Beat in the egg and vanilla extract until well combined.
  3. Gradually add the flour, baking powder, and salt to the wet ingredients in two additions, mixing on low speed until just combined.
  4. Gently knead the dough until it forms a ball. Wrap in plastic wrap and chill in the refrigerator for at least 2 hours, or overnight.
  5. Before rolling out the dough, let it rest at room temperature for 10-15 minutes to soften.
  6. Roll out the dough between two sheets of parchment paper to about ¼ inch thickness. Cut out cookies with a round cookie cutter (approximately 2.4 inches in diameter) and place on a parchment-lined baking sheet. Chill cut-out cookies for an additional 10 minutes.
  7. Bake in a preheated oven at 350°F (175°C) for about 10 minutes, or until edges are lightly golden. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

To Assemble the Cookies:

  1. Gently warm the caramel sauce in the microwave for 10-15 seconds at a time, stirring between each interval, until it reaches a spreadable consistency similar to royal icing.
  2. Spread a layer of caramel on each cookie, leaving a small border around the edges.
  3. Melt the chocolate chips in the microwave in 20-second bursts, stirring between each, until smooth and spreadable.
  4. With a clean knife, spread the melted chocolate over the caramel layer on each cookie.
  5. Allow the cookies to set at room temperature for at least 30 minutes so the caramel and chocolate can firm up.
  6. Store the completed cookies in an airtight container.
