Amaretti Cookies Recipe

Ingredients:

  • 2 ¼ cups almond flour
  • ⅔ cup granulated sugar
  • ¼ teaspoon salt
  • 2 large egg whites, at room temperature
  • 1 teaspoon lemon zest
  • ½ teaspoon almond extract
  • ½ cup powdered sugar for coating

Instructions:

  1. Oven Preparation:
    • Begin by preheating your oven to 300°F (150°C). Prepare a large baking sheet by lining it with parchment paper.
  2. Combine Dry Ingredients:
    • In a bowl, combine the almond flour, granulated sugar, lemon zest, and salt. Whisk these ingredients together until well mixed.
  3. Beat Egg Whites:
    • In a separate bowl, use an electric mixer to beat the egg whites until stiff peaks form. This will create the light and airy texture characteristic of amaretti cookies.
  4. Fold in Egg Whites:
    • Carefully fold the beaten egg whites into the dry ingredients. Add the almond extract during this step. Use a spatula to gently combine everything without deflating the egg whites.
  5. Sugar Coating:
    • Spread the powdered sugar on a plate. With a 1 ½ tablespoon scoop or spoon, form the dough into 1-inch balls. Roll each ball in the powdered sugar, ensuring it’s fully coated on all sides.
  6. Bake the Cookies:
