Hearty Taco Soup

Ingredients:

  • 1½ lbs of ground beef
  • 1 (15.25 oz) can of black beans, drained and rinsed
  • 1 (15.25 oz) can of kidney beans, drained and rinsed
  • 1 (15.25 oz) can of whole kernel corn, drained and rinsed
  • 2 (15.25 oz) cans of diced tomatoes
  • 1 (1 oz) package of taco seasoning (original, mild, or hot according to preference)
  • 1 (1 oz) package of ranch seasoning
  • 1 pint (2 cups) of salsa (homemade or store-bought, adjust heat to taste)
  • 2½ cups of water

Instructions:

  1. Cook the Beef: In a large pot over medium-high heat, brown the ground beef until it’s fully cooked and no longer pink. If desired, drain the excess fat and transfer the beef to a paper towel-lined plate to remove any remaining fat.
  2. Combine Soup Ingredients: In the same pot, add the drained and rinsed black beans, kidney beans, whole kernel corn, and diced tomatoes. Stir to combine these ingredients well.
  3. Add Flavorings: Pour in the salsa and water. Then, sprinkle in the taco seasoning and ranch seasoning. Stir everything together until well mixed. Bring the mixture to a boil, then reduce the heat to medium-low.
  4. Simmer the Soup: Return the cooked ground beef to the pot, stirring it into the soup. Allow the soup to simmer on low heat for 15-20 minutes, letting the flavors meld together.
  5. Serve and Enjoy: Ladle the warm soup into bowls. Feel free to garnish with your favorite taco toppings such as shredded cheese, sour cream, chopped cilantro, or avocado slices.
