Cheesy Double Beef Burrito

Ingredients:

  • 2 pounds ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper
  • ½ teaspoon red pepper flakes
  • 1 ounce packet taco seasoning mix
  • ½ cup water
  • 4 ounces diced green chilies
  • 15 ounces nacho cheese sauce
  • 5.6 ounces Knorr® Mexican rice
  • 3 cups Colby jack cheese, shredded
  • 3.5 ounces Santa Fe style tortilla strips
  • 1 cup sour cream
  • 10 burrito-size flour tortillas

Instructions:

  1. In a large skillet or cast iron pan over medium heat, add the ground beef, diced onions, and seasonings. Stir to combine.
  2. Cook until the beef is browned and the onions are tender. Add the minced garlic and diced green chilies, cooking for an additional 2 minutes. Drain the excess fat and return the mixture to the pan.
  3. Sprinkle the taco seasoning mix over the beef mixture and add the water. Simmer on low for 5 minutes, allowing the flavors to meld.
  4. Prepare the Mexican rice according to the package instructions and set it aside.
  5. In a small saucepan, heat the nacho cheese sauce until warm.
  6. Warm the flour tortillas to make them pliable. To assemble the burritos, layer each tortilla with the beef mixture, a scoop of nacho cheese, cooked rice, shredded Colby jack cheese, a dollop of sour cream, and a handful of tortilla strips.
  7. Fold the sides of the tortilla over the filling, then roll it up to form a burrito.
  8. For a finishing touch, grill the burritos on the stove for a few minutes on each side until they are golden and crispy, if desired.
  9. Serve immediately and enjoy your cheesy double beef burritos!
