Pepperoni Pizza Meatloaf

For the Meatloaf:

  • 1 ½ lbs lean ground beef
  • 1/2 green bell pepper, diced
  • 1 white onion, diced
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup pizza sauce
  • 1 clove garlic, pressed
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 20 pepperoni slices, cut into small pieces
  • 2 tablespoons freshly chopped parsley
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Topping:

  • 2 tablespoons pizza sauce
  • Italian seasoning, to taste
  • 1/4 cup shredded mozzarella cheese
  • 15 pepperoni slices

Preparation:

  1. Preheat Oven:
    • Preheat your oven to 350˚F.
  2. Prepare the Meatloaf:
    • In a large bowl, combine the ground beef, diced green bell pepper, diced onion, Italian bread crumbs, egg, shredded mozzarella, pizza sauce, pressed garlic, Italian seasoning, onion powder, garlic powder, chopped pepperoni, parsley, salt, and black pepper. Mix until well combined.
  3. Form the Meatloaf:
    • Press the mixture into an 8”x5” loaf pan, smoothing the top.
  4. Bake the Meatloaf:
    • Place the loaf pan on a larger pan lined with foil or parchment paper to catch any drips.
    • Bake in the preheated oven for 55 minutes.
  5. Add the Topping:
    • After 55 minutes, remove the meatloaf from the oven. If there is excess grease in the pan, carefully spoon it out.
    • Brush the top of the meatloaf with the additional 2 tablespoons of pizza sauce. Sprinkle with Italian seasoning and then top with 1/4 cup shredded mozzarella cheese. Arrange the pepperoni slices over the cheese.
  6. Finish Baking:
    • Return the meatloaf to the oven and bake for an additional 20 minutes, or until the top is browned and the cheese is bubbly.
  7. Cool and Serve:
    • Allow the meatloaf to cool for 10 minutes before slicing into 8 equal pieces.
