Levain Chocolate Chip Walnut Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/4 cups cake flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup unsalted cold butter, cubed
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 cup dark chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup walnuts, chopped and toasted
  • 2 whole eggs, lightly beaten
  • 1 teaspoon vanilla extract

Preparation:

  1. Mix Dry Ingredients:
    • In a bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and kosher salt until well combined. Set aside.
  2. Cream Butter and Sugars:
    • In a stand mixer, add the cold, cubed butter and beat on medium-high speed for 1 minute to slightly soften the butter.
    • Add both the granulated and brown sugars to the mixer and continue to beat for an additional minute until well combined.
  3. Incorporate Dry Ingredients:
    • Gradually add the dry ingredients to the butter mixture in two batches, mixing until the ingredients are just incorporated. The mixture should have a crumbly texture, similar to a streusel topping.
  4. Add Chocolate and Nuts:
    • Mix in the dark chocolate chips, milk chocolate chips, and toasted walnuts until just combined.
  5. Add Eggs and Vanilla:
    • Pour in the beaten eggs and vanilla extract with the mixer on low speed, mixing until the dough comes together and resembles tacky cookie dough.
  6. Form Cookies:
    • Remove the dough from the mixer and use a spatula to fold in any unincorporated ingredients from the bottom of the bowl.
    • Weigh out 6 oz. portions of the dough and gently form each into a rustic ball.
    • Place the dough balls onto two parchment-lined baking sheets.
  7. Chill the Dough:
    • Freeze the cookie dough balls for at least 60 minutes or refrigerate overnight if you have time.
  8. Bake the Cookies:
    • Preheat the oven to 375°F.
    • Place the cookies on the middle rack of the oven and bake for 18-23 minutes, or until the edges are golden brown.
  9. Cool and Serve:
    • Remove the cookies from the oven and let them cool on a wire rack for 5 minutes.
    • Enjoy warm, ideally with a scoop of vanilla ice cream.
