Dr Pepper Texas Sheet Cake

For the Cake:

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 cup Dr Pepper
  • 2 large eggs, lightly beaten
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt

For the Icing:

  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup Dr Pepper
  • 2 tablespoons whole milk
  • 4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups chopped pecans

Preparation:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F and grease a 9×13-inch baking pan with nonstick spray. Set aside.
  2. Make the Cake Batter:
    • In a medium saucepan over medium-high heat, combine the Dr Pepper, butter, and cocoa powder. Stir frequently and bring the mixture to a boil, then remove from heat.
    • In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt. Pour in the Dr Pepper mixture and whisk until well combined.
    • Add the beaten eggs, buttermilk, and vanilla extract to the batter, whisking until smooth.
    • Pour the batter into the prepared baking pan.
  3. Bake the Cake:
    • Bake the cake for 16-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake rest while you prepare the icing.
  4. Prepare the Icing:
    • In a medium saucepan over medium-low heat, melt the butter and cocoa powder together, whisking until smooth.
    • Reduce the heat to low and whisk in the Dr Pepper and milk. Gradually add the powdered sugar, whisking constantly until the icing is smooth. Stir in the vanilla extract.
  5. Ice the Cake:
    • Immediately pour the icing over the warm cake, spreading it gently with a rubber spatula to cover the surface.
    • Sprinkle the chopped pecans evenly over the top of the icing.
  6. Cool and Serve:
    • Allow the cake to cool completely for about 1 hour before slicing and serving.
