Strawberry Loaf Cake with Fresh Strawberry Glaze

Ingredients

For the Loaf Cake:

  • ¾ cup (150g) granulated sugar
  • ½ cup (120mL) whole milk
  • ½ cup (120mL) vegetable oil
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 2 cups + 2 tbsp (255g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups (230g) diced fresh strawberries

For the Glaze:

  • 3 tbsp diced fresh strawberries
  • 1 cup (120g) powdered sugar
  • 1 tsp whole milk

Instructions

To Make the Loaf Cake:

  1. Preparation: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with baking spray.
  2. Combine Wet Ingredients: In a medium-sized bowl, whisk together the granulated sugar, milk, vegetable oil, egg, and vanilla extract until smooth.
  3. Mix Dry Ingredients: In a separate bowl, combine 2 cups of flour, baking powder, and salt.
  4. Blend Dry and Wet Mixtures: Gently stir the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  5. Prepare Strawberries: Toss the diced strawberries with the remaining 2 tablespoons of flour in a small bowl. This helps prevent the strawberries from sinking in the batter. Gently fold the coated strawberries into the cake batter.
  6. Bake: Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaf cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

To Make the Glaze:

  1. Create Strawberry Mixture: In a small bowl, mash the diced strawberries. Mix in the powdered sugar and milk until smooth.
  2. Glaze the Loaf Cake: Once the cake has cooled, drizzle the strawberry glaze over the top. Allow the glaze to set for about 30 minutes before slicing and serving.
