Hawaiian Chicken

Ingredients:

  • 2 teaspoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 1 red bell pepper, diced
  • 15 ounces pineapple chunks, juice reserved and fruit separated
  • ⅓ cup chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons light brown sugar
  • 1 garlic clove, minced
  • 1 teaspoon ginger, grated
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions:

  1. Prepare the Sauce:
    • In a bowl, combine the juice from the pineapple chunks (about 1 cup), chicken broth, soy sauce, brown sugar, minced garlic, and grated ginger. If you enjoy a bit of heat, include the red pepper flakes. Stir well and set aside.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper and add them to the skillet. Sauté for about 8 minutes, stirring occasionally, until the chicken is nearly cooked through.
  3. Add Vegetables and Pineapple:
    • To the skillet, add the diced red bell pepper and cook for 2-3 minutes until softened. Follow with the pineapple chunks and cook for an additional 3-4 minutes.
  4. Add the Sauce:
    • Pour the prepared sauce over the chicken, pineapple, and bell pepper. Stir to combine and allow the mixture to simmer for about 5 minutes.
  5. Thicken the Sauce:
    • In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Gradually stir this into the skillet until the sauce thickens to your liking. Cook for a couple more minutes to ensure everything is well combined and heated through.
  6. Garnish and Serve:
    • Just before serving, sprinkle the Hawaiian chicken with sesame seeds and chopped green onions.
