Baked Broccoli and Macaroni Cheese
Ingredients:
- 1/4 cup (4 tablespoons) unsalted butter
- 1/2 teaspoon dried chipotle chile pepper
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 cups whole milk, plus an additional 2 tablespoons
- 8 ounces dried elbow macaroni
- 2 cups frozen broccoli florets
- 12 ounces shredded mild cheddar cheese
- 2 tablespoons all-purpose flour
Instructions:
- Melt and Season:
- Heat a large skillet over medium-high heat. Add the butter, chipotle pepper, salt, and black pepper, stirring until the butter is melted and the spices are well combined.
- Cook Macaroni:
- Pour in 3 cups of milk and bring to a gentle bubble. Add the macaroni, stirring occasionally, and let it cook for about 4-5 minutes or until the pasta is almost done.
- Add Broccoli:
- Mix in the frozen broccoli florets, continuing to cook for an additional 2 minutes until the broccoli is heated through.
- Make Flour Slurry:
- In a resealable jar, shake together 2 tablespoons of milk with 2 tablespoons of flour until you have a smooth slurry. Set aside.
- Preheat Broiler:
- Set your oven to broil and arrange a rack close to the top.
- Combine Cheese and Slurry:
- Stir 8 ounces of the shredded cheese into the skillet. Then, add the prepared slurry, mixing until everything is well incorporated.
- Broil:
- Top the macaroni mixture with the remaining 4 ounces of cheese. Place the skillet under the broiler for 2-4 minutes, or until the cheese on top is melted and has started to turn golden brown.
