Ingredients:

  • 1 (16-ounce) box of penne pasta
  • ⅔ cup of olive oil
  • ¼ cup of lemon juice
  • ½ cup of mayonnaise
  • 3 tablespoons of Italian seasoning
  • ¾ cup of grape tomatoes, halved
  • 1½ cups of shaved Parmesan cheese
  • ¼ cup of fresh basil, chopped

Instructions:

  1. Prepare the Pasta: Cook the penne pasta following the directions on the package. Once cooked, drain the pasta and allow it to cool.
  2. Make the Dressing: In a large mixing bowl, whisk together the olive oil, lemon juice, mayonnaise, and Italian seasoning until well combined.
  3. Combine Salad Ingredients: Add the cooled pasta to the bowl with the dressing. Then, fold in the halved grape tomatoes, shaved Parmesan cheese, and chopped basil. Toss everything together until the pasta and additions are evenly coated with the dressing.
  4. Chill the Salad: Cover the bowl and place the pasta salad in the refrigerator for at least 8 hours, ideally overnight, to let the flavors meld together.
