Easy Brownie Truffles

Ingredients:

  • 1 box (18 oz) brownie mix (plus ingredients listed on the box)
  • 8 oz cream cheese, room temperature
  • 3 cups chocolate melting wafers
  • Sprinkles for decorating

Instructions:

  1. Bake the Brownies:
    • Prepare the brownies in a 9×13-inch pan according to the package directions. Let the brownies cool completely.
  2. Prepare the Brownie Mixture:
    • Scoop the soft, baked brownies into a large bowl, leaving the firmer edges behind.
    • Add the cream cheese to the brownie mixture and beat with a hand or stand mixer until fully combined and smooth, with no lumps of cream cheese remaining.
  3. Form the Truffles:
    • Roll the brownie mixture into 1-tablespoon-sized balls and place them on a parchment-lined baking sheet.
    • Freeze the truffles for 30 minutes, or until solid.
  4. Coat the Truffles:
    • Once the truffles are frozen, melt the chocolate wafers in a microwave-safe bowl in 20-second increments, stirring until smooth.
    • Using a fork, dip each frozen truffle into the melted chocolate, tapping gently to remove any excess. Return the coated truffles to the baking sheet and immediately top with sprinkles.
  5. Set the Coating:
    • Place the truffles in the refrigerator for 15-20 minutes to allow the chocolate coating to set.
