Orange Cheesecake Recipe

Ingredients
For the base:

  • 75 grams Maria cookies
  • 35 grams butter

For the filling:

  • 200 grams cold cream cheese
  • 75 grams cold heavy cream
  • 75 grams sugar
  • 5 grams unflavored gelatin
  • 27 ml orange juice

For the decoration:

  • 75 ml orange juice
  • 18 grams sugar
  • Juice of 1/2 lemon
  • Orange zest
  • 2 grams unflavored gelatin

Instructions

  1. Prepare the base:
    Melt the butter over low heat. Crush the Maria cookies in a food processor until they resemble fine crumbs. Mix the cookie crumbs with the melted butter until well combined. Press this mixture into the bottom of your chosen mold (preferably a springform pan for easier removal). If not using a springform pan, line the base with parchment paper for easy removal later. Freeze for 15 minutes until the mixture hardens.
  2. Prepare the filling:
    In a bowl, beat the sugar with the heavy cream until well combined. Add the cold cream cheese and the gelatin, previously hydrated with the orange juice (note: the gelatin will thicken after a few minutes of hydration; to dissolve, heat it briefly in the microwave or over a double boiler). Add this to the mixture and beat well until fully incorporated. Pour the mixture over the hardened cookie base.
  3. Chill the filling:
    Return the cheesecake to the freezer for about 30 minutes.
  4. Prepare the decoration:
    In a saucepan, combine the orange juice, sugar, and lemon juice. Mix well to dissolve the sugar, then add the gelatin, stirring well to avoid lumps. Add the orange zest, remove from heat, and let it cool completely. It’s important that this mixture is completely cool.
  5. Add the decoration:
    Once the cheesecake is firm, pour the cooled orange mixture over the top. Freeze for another 30 minutes.
