Coconut Truffles Recipe

Ingredients:

  • 3 cups coconut flakes (either sweetened or unsweetened)
  • ½ cup condensed milk
  • 12 ounces semi-sweet chocolate chips, melted
  • 2 tablespoons unsweetened shredded coconut for garnish (optional)

Instructions:

  1. Mix Coconut and Condensed Milk:
    • In a bowl, combine the coconut flakes and condensed milk until the mixture is evenly moistened.
  2. Form the Truffles:
    • Use a tablespoon-sized cookie scoop or a spoon to scoop out the mixture. Roll it between your palms to form balls. Place these on a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes to an hour to firm up.
  3. Melt the Chocolate:
    • Melt the chocolate chips in a suitable method, either using a double boiler on the stove or by microwaving in short bursts, stirring in between until smooth.
  4. Dip Coconut Balls:
    • Dip each chilled coconut ball into the melted chocolate, ensuring it’s fully coated. Transfer the chocolate-covered truffles back to the parchment-lined baking sheet.
  5. Add Coconut Garnish:
    • While the chocolate is still wet, sprinkle each truffle with a little of the shredded coconut, if desired. Refrigerate again for about 30 minutes, or until the chocolate has set.
