Cod with Tomato Lemon Butter Sauce

Ingredients:

  • 1 tbsp olive oil
  • 3 tbsp butter, divided
  • 1 lb cod fillets
  • Salt and freshly ground black pepper, to taste
  • 1 lb cherry tomatoes, halved
  • 3 garlic cloves, minced
  • A pinch of red pepper flakes
  • 3 green onions, sliced, whites and greens separated
  • 1/2 cup chicken broth, white wine, or dashi
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh basil, finely chopped

Instructions:

  1. Begin by heating olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Season the cod fillets with salt and pepper, then place them in the skillet. Cook each side for about 2-3 minutes until they turn golden brown and are fully cooked. Once done, transfer the cod to a plate and set it aside.
  2. In the same skillet, add the halved cherry tomatoes. Cook for 3-5 minutes, or until the tomatoes start to blister. Stir occasionally.
  3. Lower the heat to medium. Add the minced garlic, the white parts of the green onions, and the red pepper flakes to the skillet. Cook for about 1 minute until the mixture emits a fragrant aroma.
  4. Pour in the chicken broth (or your choice of white wine or dashi). Allow it to come to a simmer and let it cook for 3 minutes.
  5. Stir in the lemon juice and the remaining tablespoon of butter. Season with salt and pepper according to your taste preferences.
  6. Return the cod to the skillet, along with the green onion tops, chopped parsley, and basil. Gently mix to combine and warm the cod through.
