Crock-Pot Fully-Loaded Potatoes
Ingredients:
- 4 small baking potatoes (about 1-1/4 lbs. total)
- 1 teaspoon of oil
- 1/4 cup of light ranch dressing
- 2 tablespoons of real bacon bits
- 1/4 cup of shredded Triple Cheddar cheese blend
- 2 teaspoons of freshly chopped chives
Directions:
- Start by gently pricking the potatoes with a fork, then lightly brush each one with oil. Wrap each potato individually in aluminum foil, making sure the seam is facing upwards.
- Arrange the wrapped potatoes in your slow cooker, spacing them out evenly. Secure the lid on top.
- Set your slow cooker to cook on LOW for 6 to 7 hours, or if you’re short on time, on HIGH for 4 to 4-1/2 hours, until the potatoes are tender and cooked through.
- Once cooked, carefully unwrap the potatoes. Split them open and fluff the insides with a fork. Drizzle each potato with the light ranch dressing, sprinkle with bacon bits, and top with shredded Triple Cheddar cheese.
- Finish by garnishing the loaded potatoes with chopped fresh chives. Serve hot and enjoy the creamy, cheesy, and savory flavors of these slow-cooked delights!
