Raspberry Cream Cheese Pastry Ring

Ingredients

Pastry Base:

  • 2 packages Pillsbury™ refrigerated crescent dinner rolls

Raspberry Filling:

  • 3 cups fresh raspberries (about 12 oz)
  • ⅓ cup granulated sugar
  • 1 teaspoon fresh lemon juice
  • 4 tablespoons water, plus 3 tablespoons water, divided
  • 3 tablespoons cornstarch

Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice

Glaze Drizzle:

  • 1 cup confectioners’ sugar
  • 2 tablespoons milk (adjust as needed)

Instructions

Preparation:

  1. Heat your oven to 375°F (190°C).

Raspberry Filling:

  1. Combine raspberries, sugar, lemon juice, and 4 tablespoons water in a small saucepan over low heat. Cook, stirring frequently, until the raspberries break down, about 3-4 minutes.
  2. Dissolve cornstarch in the remaining 3 tablespoons of water and stir into the raspberry mixture. Continue to cook, stirring constantly, until the mixture thickens. Remove from heat and allow to cool.

Cream Cheese Filling:

  1. In a medium bowl, use an electric mixer to whip the cream cheese until light and airy, about 2-3 minutes.
  2. Mix in sugar, egg yolk, vanilla, and lemon juice, beating until smooth, about 2 additional minutes.

Assembling the Pastry Ring:

  1. Unroll crescent dough and separate into triangles. Arrange them on a baking sheet with the wider ends overlapping in the center and the points facing outward, forming a circle with a 5-inch opening in the middle.
  2. Spread the cream cheese filling evenly over the wider ends of the dough.
  3. Layer the raspberry filling on top of the cream cheese layer.
  4. Fold the points of the crescent dough over the fillings and tuck them under the wide ends at the center of the ring.
  5. Bake in the preheated oven until golden brown, about 20 minutes. Allow to cool slightly.

Glaze Drizzle:

  1. Whisk together confectioners’ sugar and milk in a small bowl until smooth. Adjust the consistency with more milk or sugar if necessary.
  2. Once the pastry ring has cooled, drizzle the glaze over the top.
