Blueberry Cream Cheese Buns
Ingredients
Dough:
- 3¼ cups (400g) all-purpose flour
- ¼ cup (50g) sugar
- ½ tsp (3g) salt
- 2¼ tsp (7g) active dry yeast or 25g fresh yeast
- 1 cup (240ml) lukewarm milk, divided
- 1 large egg
- 1 tsp (5g) vanilla extract
- ¼ cup (56g) softened butter
Cream Cheese Filling:
- 10 oz (300g) cream cheese, softened
- 1 large egg
- 3 tbsp (24g) powdered sugar
- 1 tsp (5g) vanilla extract
Topping:
- Fresh blueberries
- 1 egg, for brushing
- Powdered sugar, for dusting
Instructions
- Prepare the Dough:
- In a large bowl, combine yeast, 1 tsp sugar, and ¼ cup lukewarm milk. Let sit for 5 minutes until foamy.
- Add flour, remaining sugar, salt, the rest of the milk, egg, vanilla extract, and softened butter. Knead for 5-7 minutes until dough is smooth and slightly pulls away from the bowl.
- Transfer dough to an oiled bowl, cover with plastic wrap, and let rise for 1 hour in a warm place until doubled in size.
- Shape the Buns:
- Divide the dough into 12 equal pieces, shape each piece into a bun, and place on a baking sheet lined with parchment paper.
- Cover with a kitchen towel and let rest for 15-20 minutes. Meanwhile, preheat oven to 350°F (180°C).
- Prepare the Cream Cheese Filling:
- In a medium bowl, whisk together cream cheese, powdered sugar, egg, and vanilla extract until smooth. Transfer filling to a piping bag fitted with a plain tip.
- Assemble the Buns:
- Use the bottom of a flour-dusted glass to press a well in each bun.
- Pipe cream cheese filling into each well and top with fresh blueberries.
- Brush edges of buns with beaten egg.
- Bake:
- Bake buns for 20 minutes or until edges are golden brown. Transfer buns to a wire rack to cool slightly.
- Finish and Serve:
- Dust with powdered sugar and enjoy your fresh blueberry cream cheese buns!
