Molten Chocolate Lava Cake

Ingredients:

  • 2 oz semi-sweet baking chocolate
  • 4 tbsp unsalted butter
  • ½ cup powdered sugar
  • 1 large egg
  • 1 egg yolk
  • 3 tbsp all-purpose flour
  • 1 tbsp cocoa powder

Instructions:

  1. Prep: Preheat oven to 400°F. Coat two ramekins with non-stick spray or, for extra richness, butter and dust with cocoa powder.
  2. Melt Chocolate & Butter: In a microwave-safe bowl, melt chocolate and butter in 15-second intervals until smooth.
  3. Mix Ingredients: Stir in powdered sugar until well combined. Add the egg and egg yolk, mixing thoroughly. Then, gently fold in flour and cocoa powder until fully incorporated.
  4. Bake: Divide the batter evenly between the ramekins. Bake for 13 minutes, or until edges are firm but the center remains soft and jiggly.
  5. Serve: Let the cakes cool for 2 minutes. Run a knife around the edges, invert each ramekin onto a plate, and dust with powdered sugar.

Tips:

  • Pair with vanilla ice cream, whipped cream, or fresh berries for an extra treat.
  • The batter can be made ahead of time; just bring to room temperature before baking.
