Banana Chocolate Chip Muffins

Ingredients

  • 3/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 cup golden brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ripe medium bananas, mashed
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips (plus extra for topping)
  • 1 cup walnuts, chopped
  • Cupcake liners (for lining the muffin tin)

Instructions

  1. Prepare for Baking:
    • Preheat your oven to 350°F (175°C).
    • Line a muffin tin with cupcake liners and set aside.
  2. Mix Sugars and Butter:
    • In a large mixing bowl, combine the granulated sugar, golden brown sugar, and melted unsalted butter.
    • Use an electric hand mixer on medium-low speed to blend the mixture for about 1 minute until smooth.
  3. Add Eggs and Vanilla:
    • Add the eggs and vanilla extract to the sugar-butter mixture.
    • Mix on medium speed until fully incorporated.
  4. Incorporate Bananas:
    • In a separate bowl, mash the ripe bananas thoroughly.
    • Add the mashed bananas to the batter and mix until combined.
  5. Combine Dry Ingredients:
    • Sift together the all-purpose flour, baking soda, and salt.
      • Note: Sifting helps avoid clumps and ensures a smooth batter.
    • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  6. Fold in Additions:
    • Gently fold in the chopped walnuts and semisweet chocolate chips using a spatula.
  7. Fill Muffin Tin:
    • Spoon the batter into the prepared muffin tin, filling each liner about three-quarters full.
    • This recipe yields approximately 12–13 muffins.
  8. Add Toppings:
    • Sprinkle extra chocolate chips on top of each muffin for added flavor and a professional look.
  9. Bake:
    • Bake in the preheated oven for 20–24 minutes.
    • To check for doneness, insert a toothpick into the center of a muffin; it should come out clean.
  10. Cool and Serve:
    • Remove the muffins from the oven and let them cool in the tin for a few minutes.
    • Transfer the muffins to a wire rack to cool completely.
    • Serve and enjoy!

Notes

  • Sifting Dry Ingredients: This step ensures the dry ingredients are thoroughly combined and helps produce a lighter, fluffier muffin.
  • Ripening Bananas Quickly: If your bananas aren’t fully ripe, place them on a baking sheet and bake at 350°F (175°C) for 15 minutes. Allow them to cool before using.
  • Using Cupcake Liners: Liners make for easier cleanup and storage, and prevent melted chocolate from sticking to the pan.
  • Extra Chocolate Chips on Top: Adding chocolate chips on top enhances the appearance and adds extra chocolatey goodness.
