Ingredients:

For the Brownies:

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 large eggs
  • 2 large egg yolks
  • 8 tbsp unsalted butter
  • 8 oz (225 grams) chocolate chips
  • 1/2 cup vegetable oil
  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder

For the Chocolate Ganache:

  • 1/2 cup heavy cream
  • 1.5 cups chocolate chips

Topping:

  • 1/4 cup rainbow chocolate chips

Instructions:

To Make the Brownies:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper and spray with cooking spray. Set aside.
  2. Prepare the Wet Ingredients:
    • In a large bowl, whisk together the granulated sugar, brown sugar, vanilla extract, salt, whole eggs, and egg yolks until fully combined.
  3. Melt the Chocolate and Butter:
    • In a microwave-safe bowl, add the butter and chocolate chips. Microwave for 30 seconds, then stir. Repeat this process until the mixture is fully melted and smooth.
  4. Add the Oil:
    • Whisk the vegetable oil into the melted chocolate mixture.
  5. Combine the Mixtures:
    • Pour the melted chocolate mixture into the bowl with the sugar mixture. Mix until everything is fully combined. Gently fold in the flour and cocoa powder.
