Ingredients

Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs (about 10 full sheets)
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 6 tablespoons butter, melted

Cheesecake Filling:

  • 2 cups heavy whipping cream, very cold
  • 1 cup powdered sugar
  • 2-3 teaspoons vanilla extract
  • 2 (8-ounce) packages cream cheese, full fat, softened

Instructions

  1. Prepare the Graham Cracker Crust:
    • Using a food processor or blender, grind the graham crackers into fine crumbs. Alternatively, place the crackers in a zip-top bag and crush them with a rolling pin until you achieve fine crumbs. Fine crumbs are essential for the crust to hold together well.
    • In a medium-sized bowl, combine the graham cracker crumbs, sugar, and cinnamon. Stir in the melted butter until the mixture is thick, coarse, and sandy.
    • Press the crumb mixture evenly onto the bottom of a 9-inch springform pan. Use the bottom of a flat measuring cup or glass to compact the crust firmly. This step is crucial to ensure the crust doesn’t crumble later. Cover with plastic wrap and refrigerate while you prepare the filling.
  2. Make the Cheesecake Filling:
    • In the bowl of a stand mixer or a large bowl, beat the cold heavy whipping cream with the powdered sugar and vanilla extract until stiff peaks form. Set aside.
    • In another large bowl, beat the softened cream cheese until smooth and creamy.
    • Gently fold the whipped cream into the cream cheese mixture until just combined.
  3. Assemble the Cheesecake:
    • Spoon the cheesecake filling into the prepared crust and spread it into an even layer. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
  4. Serve:
