- 14 oz semi-sweet chocolate chips, divided
- 1 cup creamy peanut butter
- 6 tbsp powdered sugar
- 4 tbsp butter, softened
Instructions
Step 1: Prepare the Chocolate Base
- Line 12 muffin cups with cupcake liners and set aside.
- In a microwave-safe bowl, melt half of the chocolate chips in 30-second increments, stirring in between until smooth (about 30-60 seconds).
- Spoon about ½ tablespoon of melted chocolate into each cupcake liner, spreading it evenly across the bottom by shaking the pan gently.
- Freeze for 15 minutes to set the chocolate.
Step 2: Make the Peanut Butter Filling
- In a medium bowl, combine peanut butter, powdered sugar, and softened butter. Using a hand mixer, blend until smooth and creamy.
- Place 1 tablespoon of the peanut butter mixture on top of each chocolate layer, avoiding the edges of the liner.
- Freeze for 5 minutes to firm up the filling.
Step 3: Add the Chocolate Top Layer
- Melt the remaining chocolate chips in the microwave using the same method as in Step 1.
- Pour melted chocolate over each peanut butter layer, spreading it to cover the filling completely.
- Freeze for 10-15 minutes or refrigerate for 15-20 minutes until fully hardened.
