Hearty Beef and Macaroni Soup
Ingredients:
- 1 pound ground beef
- 1 onion, finely diced
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (29 oz) tomato sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 cups elbow macaroni
- 1 tablespoon olive oil
- 3 cloves garlic, minced
Instructions:
- Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic; cook until the onion is translucent and the garlic is fragrant.
- Cook the Beef: Add the ground beef to the pot. Break it apart with a spoon and cook until it’s browned and no longer pink.
- Add Liquids and Tomatoes: Pour in the beef broth, diced tomatoes, and tomato sauce. Stir well to combine all the ingredients.
- Season the Soup: Mix in the brown sugar, Worcestershire sauce, dried oregano, basil, thyme, and bay leaves. Stir to evenly distribute the seasonings.
- Simmer: Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes to meld the flavors.
- Cook Macaroni Separately: While the soup is simmering, cook the elbow macaroni in a separate pot according to the package instructions until al dente. Drain and set aside.
- Finalize the Soup: After simmering, remove the bay leaves from the pot. Taste the soup and adjust the seasoning if necessary.
- Combine Pasta and Soup: Add the cooked macaroni to the soup. Stir well and let it simmer for an additional 5 minutes to allow the pasta to absorb some of the flavors.
- Serve: Ladle the soup into bowls and enjoy it hot!
