Hearty Beef and Macaroni Soup

Ingredients:

  • 1 pound ground beef
  • 1 onion, finely diced
  • 3 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (29 oz) tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 2 cups elbow macaroni
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced

Instructions:

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic; cook until the onion is translucent and the garlic is fragrant.
  2. Cook the Beef: Add the ground beef to the pot. Break it apart with a spoon and cook until it’s browned and no longer pink.
  3. Add Liquids and Tomatoes: Pour in the beef broth, diced tomatoes, and tomato sauce. Stir well to combine all the ingredients.
  4. Season the Soup: Mix in the brown sugar, Worcestershire sauce, dried oregano, basil, thyme, and bay leaves. Stir to evenly distribute the seasonings.
  5. Simmer: Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes to meld the flavors.
  6. Cook Macaroni Separately: While the soup is simmering, cook the elbow macaroni in a separate pot according to the package instructions until al dente. Drain and set aside.
  7. Finalize the Soup: After simmering, remove the bay leaves from the pot. Taste the soup and adjust the seasoning if necessary.
  8. Combine Pasta and Soup: Add the cooked macaroni to the soup. Stir well and let it simmer for an additional 5 minutes to allow the pasta to absorb some of the flavors.
  9. Serve: Ladle the soup into bowls and enjoy it hot!
