Brownie Cheesecake Swirl Bars

Ingredients

Brownie Batter:

  • 1½ sticks (170g) butter
  • 10.5 oz (300g) dark chocolate
  • 3 large eggs
  • 1¼ cups (250g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • ½ tsp salt

Cheesecake Layer:

  • 13 oz (370g) cream cheese, at room temperature
  • 1½ cups (180g) powdered sugar
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Prep: Preheat oven to 350°F (180°C) or 170°C for fan-assisted. Line a 9-inch square baking pan with parchment paper.
  2. Make the Brownie Batter:
    • In a bowl, whip the eggs and sugar together until the mixture is light and thick, resembling custard.
    • In a microwave-safe bowl, melt the butter and chocolate in 30-second intervals until smooth.
    • Gradually add the melted chocolate mixture into the egg mixture, stirring until combined.
    • Gently fold in the flour and salt until fully incorporated.
    • Set aside about ⅓ cup of the brownie batter for swirling. Pour the remaining batter into the prepared pan.
  3. Make the Cheesecake Layer:
    • In a clean bowl, combine cream cheese, powdered sugar, vanilla, and eggs. Beat until smooth and creamy.
  4. Assemble and Swirl:
    • Pour the cheesecake mixture over the brownie batter in the pan. Add dollops of the reserved brownie batter on top of the cheesecake layer.
    • Use a knife or spoon to gently swirl the brownie dollops into the cheesecake for a marbled effect.
  5. Bake:
    • Bake for 30-35 minutes, or until the cheesecake edges turn golden, but the center still has a slight wobble.
    • For gooey brownies, bake the minimum time; for a firmer texture, bake a few minutes longer.
  6. Cool and Serve:
    • Let the brownies cool completely in the pan before slicing.
