Brownie Cheesecake Swirl Bars
Ingredients
Brownie Batter:
- 1½ sticks (170g) butter
- 10.5 oz (300g) dark chocolate
- 3 large eggs
- 1¼ cups (250g) granulated sugar
- 1 cup (120g) all-purpose flour
- ½ tsp salt
Cheesecake Layer:
- 13 oz (370g) cream cheese, at room temperature
- 1½ cups (180g) powdered sugar
- 1 tsp vanilla extract
- 2 large eggs
Instructions
- Prep: Preheat oven to 350°F (180°C) or 170°C for fan-assisted. Line a 9-inch square baking pan with parchment paper.
- Make the Brownie Batter:
- In a bowl, whip the eggs and sugar together until the mixture is light and thick, resembling custard.
- In a microwave-safe bowl, melt the butter and chocolate in 30-second intervals until smooth.
- Gradually add the melted chocolate mixture into the egg mixture, stirring until combined.
- Gently fold in the flour and salt until fully incorporated.
- Set aside about ⅓ cup of the brownie batter for swirling. Pour the remaining batter into the prepared pan.
- Make the Cheesecake Layer:
- In a clean bowl, combine cream cheese, powdered sugar, vanilla, and eggs. Beat until smooth and creamy.
- Assemble and Swirl:
- Pour the cheesecake mixture over the brownie batter in the pan. Add dollops of the reserved brownie batter on top of the cheesecake layer.
- Use a knife or spoon to gently swirl the brownie dollops into the cheesecake for a marbled effect.
- Bake:
- Bake for 30-35 minutes, or until the cheesecake edges turn golden, but the center still has a slight wobble.
- For gooey brownies, bake the minimum time; for a firmer texture, bake a few minutes longer.
- Cool and Serve:
- Let the brownies cool completely in the pan before slicing.
