Zucchini Enchilada Roll-Ups

Ingredients

  • For the Filling:
    • 2 cups cooked chicken, shredded or diced
    • 1 cup black beans, drained and rinsed
    • 1 cup corn kernels (fresh or frozen)
    • 1 cup enchilada sauce
  • For Assembly:
    • 2 pounds zucchini (approximately 2–4 medium-large), sliced thinly lengthwise*
    • 1/2 cup enchilada sauce
    • 1 cup cheddar cheese, shredded
    • 2 tablespoons cilantro, chopped (optional)

Instructions

  1. Prepare the Filling:
    • In a large bowl, combine the shredded or diced cooked chicken, black beans, corn, and 1 cup of the enchilada sauce. Mix well to evenly coat the ingredients.
  2. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Spread 1/2 cup of enchilada sauce evenly over the bottom of a large baking dish.
  3. Assemble the Roll-Ups:
    • Lay 2–3 slices of zucchini on a flat surface, overlapping them slightly to create a strip about 3–4 inches wide.
    • Place 2–3 tablespoons of the chicken filling onto one end of the zucchini strips.
    • Roll the zucchini slices up tightly around the filling to form a roll.
    • Place the roll seam-side down in the prepared baking dish.
    • Repeat this process until all the filling and zucchini slices are used, making approximately 24 rolls.
  4. Add Sauce and Cheese:
    • Drizzle the remaining 1/2 cup of enchilada sauce over the top of the zucchini rolls.
    • Sprinkle the shredded cheddar cheese evenly over the rolls.
  5. Bake:
    • Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
  6. Garnish and Serve:
    • Remove from the oven and let it cool slightly.
    • Garnish with chopped cilantro if desired.
    • Serve warm and enjoy!

Notes

  • Zucchini Preparation: To slice the zucchini thinly lengthwise, use a mandoline slicer or a sharp knife. The slices should be thin enough to roll but sturdy enough to hold the filling.
  • Vegetarian Option: Omit the chicken and add more beans or vegetables like bell peppers for a vegetarian version.
  • Make Ahead: You can assemble the roll-ups in advance and refrigerate them. When ready to bake, add the sauce and cheese, and adjust the baking time if necessary.
  • Serving Suggestions: Serve with additional enchilada sauce, sour cream, guacamole, or salsa on the side.
