Zucchini Enchilada Roll-Ups
Ingredients
- For the Filling:
- 2 cups cooked chicken, shredded or diced
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup enchilada sauce
- For Assembly:
- 2 pounds zucchini (approximately 2–4 medium-large), sliced thinly lengthwise*
- 1/2 cup enchilada sauce
- 1 cup cheddar cheese, shredded
- 2 tablespoons cilantro, chopped (optional)
Instructions
- Prepare the Filling:
- In a large bowl, combine the shredded or diced cooked chicken, black beans, corn, and 1 cup of the enchilada sauce. Mix well to evenly coat the ingredients.
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Spread 1/2 cup of enchilada sauce evenly over the bottom of a large baking dish.
- Assemble the Roll-Ups:
- Lay 2–3 slices of zucchini on a flat surface, overlapping them slightly to create a strip about 3–4 inches wide.
- Place 2–3 tablespoons of the chicken filling onto one end of the zucchini strips.
- Roll the zucchini slices up tightly around the filling to form a roll.
- Place the roll seam-side down in the prepared baking dish.
- Repeat this process until all the filling and zucchini slices are used, making approximately 24 rolls.
- Add Sauce and Cheese:
- Drizzle the remaining 1/2 cup of enchilada sauce over the top of the zucchini rolls.
- Sprinkle the shredded cheddar cheese evenly over the rolls.
- Bake:
- Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
- Garnish and Serve:
- Remove from the oven and let it cool slightly.
- Garnish with chopped cilantro if desired.
- Serve warm and enjoy!
Notes
- Zucchini Preparation: To slice the zucchini thinly lengthwise, use a mandoline slicer or a sharp knife. The slices should be thin enough to roll but sturdy enough to hold the filling.
- Vegetarian Option: Omit the chicken and add more beans or vegetables like bell peppers for a vegetarian version.
- Make Ahead: You can assemble the roll-ups in advance and refrigerate them. When ready to bake, add the sauce and cheese, and adjust the baking time if necessary.
- Serving Suggestions: Serve with additional enchilada sauce, sour cream, guacamole, or salsa on the side.
