Parmesan Zucchini Fries

Ingredients

  • 3 small zucchinis
  • 2 eggs
  • 1 pinch salt
  • Ground black pepper, to taste
  • 2 cups Japanese panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • Ranch dressing, for serving

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 425°F (218°C).
    • Line a baking sheet with parchment paper and set aside.
  2. Prepare the Zucchini:
    • Slice the zucchinis into strips approximately 3 inches (7 cm) long and 1/2 inch (1 cm) thick.
  3. Prepare the Egg Mixture:
    • In a bowl, beat the 2 eggs.
    • Add a pinch of salt and a few grinds of black pepper to the eggs, mixing well.
  4. Prepare the Breading Mixture:
    • In a shallow dish or on a large plate, combine the panko bread crumbs and grated Parmesan cheese. Mix thoroughly.
  5. Coat the Zucchini Strips:
    • Working in batches, dip each zucchini strip into the beaten eggs, allowing any excess to drip off.
    • Roll the zucchini strip in the panko-Parmesan mixture, pressing gently to ensure an even coating.
    • Place the coated zucchini strips on the prepared baking sheet in a single layer.
  6. Bake:
    • Bake the zucchini fries for 20 to 25 minutes.
    • Rotate the baking sheet and turn the zucchini fries halfway through baking to ensure they become golden brown and crispy on all sides.
  7. Serve:
    • Remove from the oven and serve immediately.
    • Offer ranch dressing on the side for dipping.
