Parmesan Zucchini Fries
Ingredients
- 3 small zucchinis
- 2 eggs
- 1 pinch salt
- Ground black pepper, to taste
- 2 cups Japanese panko bread crumbs
- 1/2 cup grated Parmesan cheese
- Ranch dressing, for serving
Instructions
- Preheat the Oven:
- Preheat your oven to 425°F (218°C).
- Line a baking sheet with parchment paper and set aside.
- Prepare the Zucchini:
- Slice the zucchinis into strips approximately 3 inches (7 cm) long and 1/2 inch (1 cm) thick.
- Prepare the Egg Mixture:
- In a bowl, beat the 2 eggs.
- Add a pinch of salt and a few grinds of black pepper to the eggs, mixing well.
- Prepare the Breading Mixture:
- In a shallow dish or on a large plate, combine the panko bread crumbs and grated Parmesan cheese. Mix thoroughly.
- Coat the Zucchini Strips:
- Working in batches, dip each zucchini strip into the beaten eggs, allowing any excess to drip off.
- Roll the zucchini strip in the panko-Parmesan mixture, pressing gently to ensure an even coating.
- Place the coated zucchini strips on the prepared baking sheet in a single layer.
- Bake:
- Bake the zucchini fries for 20 to 25 minutes.
- Rotate the baking sheet and turn the zucchini fries halfway through baking to ensure they become golden brown and crispy on all sides.
- Serve:
- Remove from the oven and serve immediately.
- Offer ranch dressing on the side for dipping.
