Red Velvet Cake Mix Cookie Bars Recipe
Ingredients:
For the Cookie Bars:
- 1 box (15.25 oz) red velvet cake mix
- 2 large eggs
- 1/2 cup melted butter
- 1 tsp vanilla extract
For the Cream Cheese Frosting:
- 8 oz cream cheese (room temperature)
- 2 tbsp butter (room temperature)
- 2 tsp vanilla extract
- 3.5 cups powdered sugar
Instructions:
- Prepare the Cookie Bars:
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper. Set aside.
- In a large mixing bowl, combine the red velvet cake mix, eggs, melted butter, and vanilla extract. Stir until the dough is fully mixed and thick.
- Press the dough evenly into the prepared baking dish.
- Bake:
- Bake the cookie bars for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely before adding the frosting.
- Make the Cream Cheese Frosting:
- In a large bowl, cream together the room-temperature cream cheese and butter. Add the vanilla extract and continue mixing.
