Pumpkin Muffin Recipe
Ingredients:
For the Muffins:
- 15 oz pumpkin puree
- 1/4 cup melted butter (room temperature)
- 3/4 cup brown sugar
- 2 eggs (room temperature)
- 2 tsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup milk (room temperature)
For the Streusel Topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar (packed)
- 1 tbsp granulated sugar
- 1/2 tsp pumpkin pie spice
- 3 tbsp salted butter (melted)
Instructions:
- Preheat the Oven: Set your oven to 450°F (230°C) and line a 12-cup muffin tin with paper liners. Lightly spray the liners with nonstick cooking spray.
- Make the Muffin Batter:
- In a large bowl, use a hand mixer to cream together the pumpkin puree, melted butter, and brown sugar for about 1 minute.
- Add the eggs and mix until well combined.
- Stir in the baking powder, pumpkin pie spice, salt, and vanilla extract.
- Gradually add half of the flour and mix until just combined. Pour in the milk and mix. Scrape down the sides of the bowl, add the remaining flour, and mix until the batter is smooth.
- Prepare the Streusel Topping:
- In a small bowl, whisk together the flour, brown sugar, granulated sugar, and pumpkin pie spice.
- Pour in the melted butter and use a fork to toss the ingredients until crumbly.
- Assemble the Muffins:
- Divide the muffin batter evenly among the prepared muffin cups, filling them almost to the top.
- Sprinkle the streusel topping evenly over each muffin.
- Bake the Muffins:
- Place the muffins in the oven and bake at 450°F for 5 minutes.
- Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 14-16 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the Muffins:
- Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
