Pumpkin Bars with Cream Cheese Frosting Recipe

Ingredients:

For the Bars:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp ground cloves
  • 1 cup vegetable oil
  • 15 oz canned pumpkin
  • 4 large eggs

For the Cream Cheese Frosting:

  • 3 cups powdered sugar
  • 2/3 cup butter (softened)
  • 6 oz cream cheese (softened)
  • 2 tbsp milk
  • 2 tsp vanilla extract

Instructions:

To Make the Pumpkin Bars:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a 15 x 10-inch jelly roll pan with parchment paper. Lightly spray the parchment with non-stick spray. Set aside.
  2. Prepare the Batter:
    • In a large mixing bowl, combine all the ingredients for the bars: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, salt, ground cloves, vegetable oil, canned pumpkin, and eggs.
    • Using a hand mixer (or stand mixer), mix on low speed until the ingredients are moist. Then, increase to medium speed and mix for about 2 minutes until well combined.
  3. Bake the Bars:
    • Pour the batter into the prepared pan and spread it evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the bars to cool completely.

To Make the Cream Cheese Frosting:

  1. Prepare the Frosting:
    • While the bars are cooling, beat together the softened butter, cream cheese, powdered sugar, milk, and vanilla extract in a medium bowl. Mix on medium speed until smooth and creamy.
  2. Frost the Bars:
    • Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top.
  3. Slice and Serve:
    • Cut the bars into 48 pieces and enjoy your delicious pumpkin bars with cream cheese frosting!
