Pumpkin Bars with Cream Cheese Frosting Recipe
Ingredients:
For the Bars:
- 2 cups all-purpose flour
- 2 cups sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt

- 1 cup vegetable oil
- 15 oz canned pumpkin
- 4 large eggs

- 3 cups powdered sugar
- 2/3 cup butter (softened)
- 6 oz cream cheese (softened)
- 2 tbsp milk
- 2 tsp vanilla extract
Instructions:
To Make the Pumpkin Bars:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C) and line a 15 x 10-inch jelly roll pan with parchment paper. Lightly spray the parchment with non-stick spray. Set aside.
- Prepare the Batter:
- In a large mixing bowl, combine all the ingredients for the bars: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, salt, ground cloves, vegetable oil, canned pumpkin, and eggs.
- Using a hand mixer (or stand mixer), mix on low speed until the ingredients are moist. Then, increase to medium speed and mix for about 2 minutes until well combined.
- Bake the Bars:
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the bars to cool completely.

- While the bars are cooling, beat together the softened butter, cream cheese, powdered sugar, milk, and vanilla extract in a medium bowl. Mix on medium speed until smooth and creamy.

- Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top.
- Slice and Serve:
