Easy Frosted Sugar Cookie Bars Recipe
Ingredients:
For the Sugar Cookie Bars:
- 3/4 cup (167 g) unsalted butter (softened to room temperature)
- 1 cup (200 g) granulated sugar
- 2 large eggs (room temperature)
- 1 tsp vanilla extract
- 2 1/2 cups (300 g) all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
For the Buttercream Frosting:
- 1/2 cup (113 g) butter (softened)
- 2 cups (227 g) powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1-3 tbsp milk
Instructions:
To Make the Sugar Cookie Bars:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with non-stick spray. Set aside.
- Cream the Butter and Sugar:
- In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Add Eggs:
- Add the eggs one at a time, beating well between each addition and scraping down the sides of the bowl as needed.
- Add Vanilla:
- Stir in the vanilla extract and mix until fully combined.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Mix Wet and Dry Ingredients:
- Gradually fold the flour mixture into the wet mixture using a spatula. Be careful not to overmix.
- Bake the Cookie Bars:
- Press the dough evenly into the prepared baking pan. Bake for about 20 minutes, or until the edges are golden (but not browned).
- Cool:
- Remove the pan from the oven and let the bars cool completely on a wire rack.
To Make the Buttercream Frosting:
- Cream the Butter:
- While the bars are cooling, add the softened butter to a mixing bowl and beat until smooth and creamy.
- Add the Powdered Sugar:
- Gradually add the powdered sugar and mix. It will start to look crumbly at this point.
- Finish the Frosting:
- Add the vanilla extract, a pinch of salt, and 1 tablespoon of milk. Mix until smooth. If the frosting is still too thick, add more milk (1 tablespoon at a time) until it reaches a soft, spreadable consistency.
Frost and Slice:
- Once the cookie bars are completely cool, use an offset spatula to evenly spread the buttercream frosting over the top. Slice into bars and enjoy!
