Strawberry Truffles Recipe
Ingredients:
- 1 cup white chocolate chips
- ¼ cup unsalted butter
- 3 tbsp heavy whipping cream
- ½ tsp strawberry extract
- ¼ tsp vanilla extract
- 1 drop pink food coloring
- ¼ cup powdered sugar
Instructions:
- Place the white chocolate chips in a medium-sized bowl and set aside.
- In a small saucepan, melt the butter over medium heat. Stir in the heavy cream and bring to a gentle simmer.
- Once the mixture begins to simmer, pour it over the white chocolate chips. Let it sit for 1-2 minutes to soften the chocolate.
- Add the strawberry extract, vanilla extract, and pink food coloring. Whisk everything together until smooth and fully combined.
- If the chocolate hasn’t melted completely, microwave the mixture in 15-second intervals, stirring in between, until fully melted.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour to let the mixture firm up.
- Once chilled, scoop out 1 to 1 ½ tablespoons of the mixture and roll it into balls. Coat each truffle in powdered sugar.
- Refrigerate the truffles for another 30 minutes to 1 hour to let them fully set before serving.
Notes:
- If the butter starts to separate while mixing, keep stirring until it’s fully incorporated.
- Chilling for 30 minutes makes the mixture easier to handle for scooping and rolling, but you’ll need to refrigerate them longer for the truffles to harden properly.
- For the best results, use high-quality white chocolate such as Ghirardelli.
