Strawberry Truffles Recipe

Ingredients:

  • 1 cup white chocolate chips
  • ¼ cup unsalted butter
  • 3 tbsp heavy whipping cream
  • ½ tsp strawberry extract
  • ¼ tsp vanilla extract
  • 1 drop pink food coloring
  • ¼ cup powdered sugar

Instructions:

  1. Place the white chocolate chips in a medium-sized bowl and set aside.
  2. In a small saucepan, melt the butter over medium heat. Stir in the heavy cream and bring to a gentle simmer.
  3. Once the mixture begins to simmer, pour it over the white chocolate chips. Let it sit for 1-2 minutes to soften the chocolate.
  4. Add the strawberry extract, vanilla extract, and pink food coloring. Whisk everything together until smooth and fully combined.
  5. If the chocolate hasn’t melted completely, microwave the mixture in 15-second intervals, stirring in between, until fully melted.
  6. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour to let the mixture firm up.
  7. Once chilled, scoop out 1 to 1 ½ tablespoons of the mixture and roll it into balls. Coat each truffle in powdered sugar.
  8. Refrigerate the truffles for another 30 minutes to 1 hour to let them fully set before serving.

Notes:

  • If the butter starts to separate while mixing, keep stirring until it’s fully incorporated.
  • Chilling for 30 minutes makes the mixture easier to handle for scooping and rolling, but you’ll need to refrigerate them longer for the truffles to harden properly.
  • For the best results, use high-quality white chocolate such as Ghirardelli.
