Red Velvet Cake Mix Cookies Recipe
Ingredients:
- 1 (18 oz) box red velvet cake mix*
- 2/3 cup unsalted butter, melted
- 2 large eggs
- A few drops of red food coloring (optional)*
- 3/4 cup white chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line 2 baking sheets with parchment paper or silicone baking mats.
- In a large bowl, mix together the cake mix, melted butter, and eggs until smooth.
- For a brighter red color, you can add a few drops of red food coloring (optional).
- Stir in the white chocolate chips, reserving a couple of tablespoons to top the cookies later.
- Roll the dough into balls, using about 1 to 1.5 tablespoons of dough for each. Place them 2 inches apart on the prepared baking sheets. A cookie scoop can help with this.
- Optionally, press a few extra white chocolate chips on top of each cookie for decoration.
- Bake for 8-11 minutes, until the tops look set.
- Let the cookies cool on the baking sheet for about 10 minutes, then transfer them to a wire rack to cool completely.
