Apple Fritter Bites Recipe

Ingredients

For the Fritter Bites:

  • Nonstick cooking spray
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup unsweetened applesauce
  • 1½ cups finely diced Honeycrisp or Gala apples (about 2 medium apples)

For the Apple Cider Glaze:

  • 2 cups powdered sugar
  • ⅓ cup plus 2 tablespoons apple cider or apple juice

Instructions

  1. Preheat and Prepare Pan:
    • Preheat your oven to 400°F (200°C).
    • Lightly grease a baking sheet with nonstick cooking spray.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon. Set aside.
  3. Mix Wet Ingredients:
    • In a large bowl, whisk the melted unsalted butter and granulated sugar until well combined.
    • Add the large egg, vanilla extract, and unsweetened applesauce to the butter mixture. Whisk until smooth.
  4. Combine Ingredients:
    • Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined. Do not overmix.
    • Gently fold in the finely diced apples until evenly distributed.
  5. Portion and Bake:
    • Scoop 1-tablespoon portions of the batter and drop them onto the prepared baking sheet, spacing them a few inches apart.
    • Bake in the preheated oven for 10 minutes.
  6. Prepare the Glaze:
    • While the fritter bites are baking, prepare the glaze by whisking together the powdered sugar and apple cider (or apple juice) in a bowl until the mixture is thin and pourable.
  7. Glaze and Broil:
    • Remove the fritter bites from the oven.
    • Set your oven to broil on high.
    • Brush some of the glaze over the warm fritter bites, allowing it to drip down the sides.
    • Place the glazed fritter bites back into the oven.
    • Broil for 2–4 minutes, rotating the pan frequently, until the glaze starts to caramelize and bubble. Watch closely to prevent burning.
  8. Final Glazing:
    • Remove the fritter bites from the oven.
    • Brush the remaining glaze evenly over the tops.
  9. Cool and Serve:
    • Allow the fritter bites to sit for about 15 minutes to let the glaze set.
