- Nonstick cooking spray
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon kosher salt
- 2 teaspoons ground cinnamon
- ¼ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- ½ cup unsweetened applesauce
- 1½ cups finely diced Honeycrisp or Gala apples (about 2 medium apples)
For the Apple Cider Glaze:
- 2 cups powdered sugar
- ⅓ cup plus 2 tablespoons apple cider or apple juice
Instructions
- Preheat and Prepare Pan:
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking sheet with nonstick cooking spray.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon. Set aside.
- Mix Wet Ingredients:
- In a large bowl, whisk the melted unsalted butter and granulated sugar until well combined.
- Add the large egg, vanilla extract, and unsweetened applesauce to the butter mixture. Whisk until smooth.
- Combine Ingredients:
- Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined. Do not overmix.
- Gently fold in the finely diced apples until evenly distributed.
- Portion and Bake:
- Scoop 1-tablespoon portions of the batter and drop them onto the prepared baking sheet, spacing them a few inches apart.
- Bake in the preheated oven for 10 minutes.
- Prepare the Glaze:
- While the fritter bites are baking, prepare the glaze by whisking together the powdered sugar and apple cider (or apple juice) in a bowl until the mixture is thin and pourable.
- Glaze and Broil:
- Remove the fritter bites from the oven.
- Set your oven to broil on high.
- Brush some of the glaze over the warm fritter bites, allowing it to drip down the sides.
- Place the glazed fritter bites back into the oven.
- Broil for 2–4 minutes, rotating the pan frequently, until the glaze starts to caramelize and bubble. Watch closely to prevent burning.
- Final Glazing:
- Remove the fritter bites from the oven.
- Brush the remaining glaze evenly over the tops.
- Cool and Serve:
- Allow the fritter bites to sit for about 15 minutes to let the glaze set.
- Serve and enjoy your homemade Apple Fritter Bites!
Tips:
- Apple Choice: Honeycrisp and Gala apples are recommended for their sweetness and firmness, but feel free to use your favorite variety.
