Cucumber, Tomato, and Avocado Salad

Ingredients

Vegetables:

  • 4 medium ripe tomatoes
  • 4 firm baby cucumbers
  • 1 ripe Hass avocado
  • 1/2 medium red onion, diced
  • 1/2 bunch fresh basil, finely chopped
  • 1 pinch granulated sugar

Dressing:

  • 6 Tbsp extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 3/4 tsp kosher salt
  • 3/4 tsp granulated sugar
  • 1 garlic clove, pressed
  • 1 tsp dried oregano
  • 1 pinch freshly ground black pepper

Instructions

  1. Core and halve the tomatoes, then cut each half into 3 wedges and crosswise in half. Place in a large bowl, sprinkle with sugar, and toss.
  2. Trim cucumber ends, peel in long stripes, and slice diagonally into 1/4″ pieces. Add to the tomato bowl.
  3. Cut the avocado into quarters, remove the pit, peel, and slice diagonally into 3/8″ pieces. Add to the bowl along with the onion and basil.
  4. In a small bowl, whisk together all dressing ingredients until blended.
  5. Pour dressing over the vegetables and gently toss with your hands. Serve immediately or let sit at room temperature to enhance flavors. Enjoy!
