Cucumber, Tomato, and Avocado Salad
Ingredients
Vegetables:
- 4 medium ripe tomatoes
- 4 firm baby cucumbers
- 1 ripe Hass avocado
- 1/2 medium red onion, diced
- 1/2 bunch fresh basil, finely chopped
- 1 pinch granulated sugar
Dressing:
- 6 Tbsp extra virgin olive oil
- 3 Tbsp red wine vinegar
- 3/4 tsp kosher salt
- 3/4 tsp granulated sugar
- 1 garlic clove, pressed
- 1 tsp dried oregano
- 1 pinch freshly ground black pepper
Instructions
- Core and halve the tomatoes, then cut each half into 3 wedges and crosswise in half. Place in a large bowl, sprinkle with sugar, and toss.
- Trim cucumber ends, peel in long stripes, and slice diagonally into 1/4″ pieces. Add to the tomato bowl.
- Cut the avocado into quarters, remove the pit, peel, and slice diagonally into 3/8″ pieces. Add to the bowl along with the onion and basil.
- In a small bowl, whisk together all dressing ingredients until blended.
- Pour dressing over the vegetables and gently toss with your hands. Serve immediately or let sit at room temperature to enhance flavors. Enjoy!
