Lemon Curd Cookies
Ingredients:
1 cup unsalted butter, softened
½ cup granulated sugar
2 large egg yolks
1 tablespoon grated lemon zest
1 tablespoon fresh lemon juice
½ teaspoon kosher salt
2 ½ cups all-purpose flour
1 cup lemon curd (store-bought or homemade)
Instructions:
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper or silicone baking mats.
In a large bowl, cream together the butter and sugar using an electric mixer until smooth and well combined.
Mix in the egg yolks, lemon zest, lemon juice, and salt, blending until everything is well incorporated.
Gradually add the flour, mixing until the dough forms soft clumps. Gather the dough in the bowl to bring it all together.
Scoop out tablespoons of dough and roll into 1-inch balls.
Arrange the dough balls on the prepared baking sheets, spacing them about 1 inch apart.
Using a floured finger or the back of a small round object (like a pestle), press a deep indentation in the center of each dough ball.
Bake the cookies for 18-20 minutes, until the bottoms are firm and lightly golden.
Take the cookies out of the oven and immediately spoon lemon curd into the indentations.
Place the cookies back in the oven for an additional 2 minutes to set the lemon curd.
Let the cookies cool and dust the edges with confectioners’ sugar before serving.
