Strawberry Bread Recipe
Ingredients:
- 2 cups spelt or all-purpose flour (gluten-free and keto options are available)
- 3/4 cup sugar (unrefined sugar can be used if preferred)
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1 2/3 cups fresh or frozen strawberries, diced
- 1 cup water
- 3 tbsp oil, butter, or almond butter (or see note below for a fat-free option)
- 2 tsp pure vanilla extract
- 1 egg, flax egg, or 2 tbsp additional water
- 1/3 cup sliced strawberries (for topping)
- Optional: 1/2 tsp cinnamon
- Optional: 1/2 cup slivered almonds or chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
- In a large bowl, combine the flour, sugar, baking powder, salt, and baking soda.
- Add the diced strawberries, water, oil (or butter/almond butter), vanilla extract, and egg (or flax egg) to the dry ingredients. Stir until the batter is well mixed.
- Pour the batter into the prepared loaf pan. Arrange the sliced strawberries on top.
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Let the bread cool completely before slicing. The taste and texture improve if you wait until the next day to enjoy it.
- Store any leftovers by slicing and freezing them for later.
