Coffee Truffles Recipe
Ingredients:
- 4 oz cream cheese or coconut butter
- 2 tbsp butter or additional coconut butter
- 3 tbsp powdered sugar or erythritol
- 1/2 tsp instant coffee
- 3 oz chocolate chips or chopped chocolate (optional)
Instructions:
- Allow the cream cheese (or coconut butter) and butter to come to room temperature if they aren’t already soft.
- Combine all ingredients in a bowl until the mixture is smooth. For the best results, use a hand mixer, though stirring with a fork can also work.
- Once smooth, spread the mixture into a container, or freeze it for a few minutes until it’s firm enough to scoop.
- Use a mini cookie scoop to form balls and place them on a parchment-lined plate. Freeze until firm.
- If you spread the mixture into a container, cut it into bars or squares once firm.
- For an extra treat, you can dip the truffles in melted chocolate. (For a smoother chocolate coating, stir in half a teaspoon of oil after melting the chocolate, though this step is optional.)
- If you want bite-sized truffles, cut them in half as soon as the chocolate sets.
- Store any leftovers in the refrigerator or freezer.
