Baked Fish and Chips Recipe

Ingredients

Chips:

  • 4 medium russet potatoes, washed and peeled
  • 3 tablespoons oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Fish:

  • 1 pound (453g) cod or other firm white fish
  • 3 tablespoons all-purpose flour
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup (70g) panko breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Chips:
    • Preheat your oven to 425°F (220°C).
    • Cut the potatoes in half lengthwise, then cut each half into 3 wedges. Place the potato wedges on a large baking sheet.
    • Drizzle the potatoes with oil and sprinkle with paprika, onion powder, garlic powder, and salt. Toss to coat the potatoes evenly.
    • Bake for 15 minutes, then remove from the oven and flip the potatoes. Continue baking for another 10 minutes or until golden and crispy.
  2. Prepare the Fish:
    • Pat the fish fillets dry with a paper towel to remove excess moisture. This step is crucial to avoid soggy fish. Cut the fish into equal-sized strips, about 1 inch by 4 inches.
    • Heat a small skillet over medium-low heat. Add 2 tablespoons of oil and the panko breadcrumbs. Stir constantly and cook until the panko is golden brown. Transfer the toasted panko to a shallow dish and mix in the Parmesan cheese, paprika, garlic powder, and a pinch of salt and pepper.
    • In a separate shallow dish, add the flour. In another shallow dish, whisk together the egg, mayonnaise, and Dijon mustard.
  3. Bread the Fish:
    • Dip each piece of fish first into the flour, then into the egg mixture, and finally coat it with the panko mixture, pressing lightly to ensure the breadcrumbs adhere.
  4. Bake the Fish and Chips:
    • Move the partially baked potatoes to one side of the baking sheet and place the breaded fish strips on the other side.
    • Bake for 10 minutes, or until the fish flakes easily with a fork and the chips are golden and crispy.
  5. Serve:
    • Serve the baked fish and chips immediately with your favorite dipping sauces. Enjoy!
