Lemon Brownies Recipe
Ingredients
- 1 1/4 cups (260g) granulated sugar
- 2 tablespoons lemon zest
- 1/2 cup (113g) melted butter
- 2 large eggs + 1 large egg yolk
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/4 cups (220g) all-purpose flour
- 1/4 teaspoon salt
- 1 cup (165g) white chocolate chips
- 3/4 cup (70g) confectioners’ sugar
- 1/2 tablespoon fresh lemon juice (for the glaze)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper. Set aside.
- Prepare the Lemon Sugar:
- In a medium bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingers to release the lemon oils, enhancing the flavor.
- Mix the Wet Ingredients:
- Stir the melted butter into the lemon sugar until well combined. Add the eggs, egg yolk, lemon juice, and vanilla extract, stirring just until everything is incorporated.
- Combine Dry Ingredients:
- Add the flour and salt to the wet mixture and stir until almost combined. Fold in the white chocolate chips, mixing just until combined.
- Bake:
- Spread the batter evenly into the prepared baking pan. Bake for 25-27 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs or clean.
- Cool and Glaze:
- Allow the brownies to cool completely in the pan. For the glaze, whisk together the confectioners’ sugar and lemon juice until smooth. Spread the glaze over the cooled brownies.
- Serve:
- Once the glaze has set, cut the brownies into squares and enjoy!
