Lemon Brownies Recipe

Ingredients

  • 1 1/4 cups (260g) granulated sugar
  • 2 tablespoons lemon zest
  • 1/2 cup (113g) melted butter
  • 2 large eggs + 1 large egg yolk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (220g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup (165g) white chocolate chips
  • 3/4 cup (70g) confectioners’ sugar
  • 1/2 tablespoon fresh lemon juice (for the glaze)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper. Set aside.
  2. Prepare the Lemon Sugar:
    • In a medium bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingers to release the lemon oils, enhancing the flavor.
  3. Mix the Wet Ingredients:
    • Stir the melted butter into the lemon sugar until well combined. Add the eggs, egg yolk, lemon juice, and vanilla extract, stirring just until everything is incorporated.
  4. Combine Dry Ingredients:
    • Add the flour and salt to the wet mixture and stir until almost combined. Fold in the white chocolate chips, mixing just until combined.
  5. Bake:
    • Spread the batter evenly into the prepared baking pan. Bake for 25-27 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs or clean.
  6. Cool and Glaze:
    • Allow the brownies to cool completely in the pan. For the glaze, whisk together the confectioners’ sugar and lemon juice until smooth. Spread the glaze over the cooled brownies.
  7. Serve:
    • Once the glaze has set, cut the brownies into squares and enjoy!
