Ingredients

For the zucchini chips:

  • 2 medium zucchini, sliced into 1/8-inch rounds
  • 1.5 tablespoons olive oil
  • 1/3 cup panko breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 1/4 teaspoon salt
  • Greek yogurt ranch (optional, for dipping)

Instructions

Prepare the Zucchini Chips:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
    • Place an oven-safe wire rack over a large rimmed baking sheet and generously spray the rack with cooking spray.
  2. Coat the Zucchini:
    • In a medium bowl, toss the zucchini slices with olive oil, ensuring they are evenly coated. Make sure the zucchini rounds are sliced thinly (1/8 inch) to achieve a crispy texture.
  3. Prepare the Coating:
    • In a small bowl, combine the panko breadcrumbs, grated parmesan cheese, and salt. Stir well to mix.
  4. Bread the Zucchini:
    • Dip each zucchini round into the breadcrumb mixture, pressing lightly to ensure the coating sticks well. Place the coated zucchini rounds on the prepared wire rack.
  5. Bake:
    • Bake the zucchini chips for 15-20 minutes, or until they are golden brown and crispy.
