Crispy Baked Zucchini Chips
Ingredients
For the zucchini chips:
- 2 medium zucchini, sliced into 1/8-inch rounds
- 1.5 tablespoons olive oil
- 1/3 cup panko breadcrumbs
- 1/3 cup grated parmesan cheese
- 1/4 teaspoon salt
- Greek yogurt ranch (optional, for dipping)
Instructions
Prepare the Zucchini Chips:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Place an oven-safe wire rack over a large rimmed baking sheet and generously spray the rack with cooking spray.
- Coat the Zucchini:
- In a medium bowl, toss the zucchini slices with olive oil, ensuring they are evenly coated. Make sure the zucchini rounds are sliced thinly (1/8 inch) to achieve a crispy texture.
- Prepare the Coating:
- In a small bowl, combine the panko breadcrumbs, grated parmesan cheese, and salt. Stir well to mix.
- Bread the Zucchini:
- Dip each zucchini round into the breadcrumb mixture, pressing lightly to ensure the coating sticks well. Place the coated zucchini rounds on the prepared wire rack.
- Bake:
- Bake the zucchini chips for 15-20 minutes, or until they are golden brown and crispy.
- Serve:
