Peanut Butter Cookie Cheesecake Bars

Ingredients:

  • 1 (16-ounce) package refrigerated peanut butter cookie dough
  • 1 (8-ounce) package cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1/2 cup Reese’s Pieces

Instructions:

  1. Preheat and Prep:
    • Preheat your oven to 350°F (175°C).
    • Line the bottom and sides of a 9×9-inch baking pan with parchment paper.
  2. Create the Cookie Base:
    • Press a little more than half of the peanut butter cookie dough into an even layer in the bottom of the prepared pan.
  3. Make the Cheesecake Layer:
    • In a medium mixing bowl, beat the cream cheese and granulated sugar with an electric mixer until smooth and well combined.
    • Add the egg and vanilla extract, and beat on low speed until just combined.
    • Spread the cream cheese mixture evenly over the cookie dough base.
  4. Add the Topping:
    • Break up the remaining cookie dough into small pieces, flatten them slightly, and scatter them over the cheesecake layer.
    • Gently press the Reese’s Pieces into the top layer of cookie dough.
  5. Bake:
    • Bake for 30-35 minutes, or until the cookie dough is golden brown and the cheesecake layer is set.
  6. Cool and Set:
    • Remove the bars from the oven and let them cool to room temperature for about an hour.
    • Refrigerate for at least two hours to allow the cheesecake layer to set completely.
  7. Serve:
    • Once set, remove the bars from the pan and slice them into squares.
