No-Bake Chocolate Oatmeal Bars

Ingredients:

  • 1 cup unsalted butter
  • 1/2 cup packed light brown sugar
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips, melted
  • 1/2 cup creamy peanut butter

Preparation:

  1. Prepare the Pan:
    • Grease a 9×9-inch baking pan and line the bottom and sides with parchment paper. Set aside.
  2. Cook the Oat Mixture:
    • In a medium-sized pot, melt the butter over medium heat. Once melted, stir in the brown sugar and oats.
    • Cook the mixture on low heat for 4 to 5 minutes, stirring occasionally.
    • Stir in the vanilla extract.
  3. Melt Chocolate and Peanut Butter:
    • While the oats are cooking, melt the chocolate chips and peanut butter together in the microwave. Heat in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
  4. Assemble the Bars:
    • Pour half of the oat mixture into the prepared pan, pressing it down evenly to create the base layer.
    • Pour the melted chocolate-peanut butter mixture over the oat layer, spreading it evenly.
    • Top with the remaining oat mixture, gently pressing it into the chocolate-peanut butter layer.
  5. Set and Cut:
    • Cover the pan and allow the mixture to cool and firm up for at least 2 hours.
    • Once firm, lift the bars out of the pan using the parchment paper. Remove the paper and cut into smaller bars.
