No-Bake Chocolate Oatmeal Bars
Ingredients:
- 1 cup unsalted butter
- 1/2 cup packed light brown sugar
- 3 cups quick-cooking oats
- 1 teaspoon vanilla extract
- 1 cup chocolate chips, melted
- 1/2 cup creamy peanut butter
Preparation:
- Prepare the Pan:
- Grease a 9×9-inch baking pan and line the bottom and sides with parchment paper. Set aside.
- Cook the Oat Mixture:
- In a medium-sized pot, melt the butter over medium heat. Once melted, stir in the brown sugar and oats.
- Cook the mixture on low heat for 4 to 5 minutes, stirring occasionally.
- Stir in the vanilla extract.
- Melt Chocolate and Peanut Butter:
- While the oats are cooking, melt the chocolate chips and peanut butter together in the microwave. Heat in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
- Assemble the Bars:
- Pour half of the oat mixture into the prepared pan, pressing it down evenly to create the base layer.
- Pour the melted chocolate-peanut butter mixture over the oat layer, spreading it evenly.
- Top with the remaining oat mixture, gently pressing it into the chocolate-peanut butter layer.
- Set and Cut:
- Cover the pan and allow the mixture to cool and firm up for at least 2 hours.
- Once firm, lift the bars out of the pan using the parchment paper. Remove the paper and cut into smaller bars.
