Levain Chocolate Chip Walnut Cookies
Ingredients:
- 2 cups all-purpose flour
- 1 1/4 cups cake flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup unsalted cold butter, cubed
- 2/3 cup granulated sugar
- 2/3 cup brown sugar
- 1 cup dark chocolate chips
- 1 cup milk chocolate chips
- 1 cup walnuts, chopped and toasted
- 2 whole eggs, lightly beaten
- 1 teaspoon vanilla extract
Preparation:
- Mix Dry Ingredients:
- In a bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and kosher salt until well combined. Set aside.
- Cream Butter and Sugars:
- In a stand mixer, add the cold, cubed butter and beat on medium-high speed for 1 minute to slightly soften the butter.
- Add both the granulated and brown sugars to the mixer and continue to beat for an additional minute until well combined.
- Incorporate Dry Ingredients:
- Gradually add the dry ingredients to the butter mixture in two batches, mixing until the ingredients are just incorporated. The mixture should have a crumbly texture, similar to a streusel topping.
- Add Chocolate and Nuts:
- Mix in the dark chocolate chips, milk chocolate chips, and toasted walnuts until just combined.
- Add Eggs and Vanilla:
- Pour in the beaten eggs and vanilla extract with the mixer on low speed, mixing until the dough comes together and resembles tacky cookie dough.
- Form Cookies:
- Remove the dough from the mixer and use a spatula to fold in any unincorporated ingredients from the bottom of the bowl.
- Weigh out 6 oz. portions of the dough and gently form each into a rustic ball.
- Place the dough balls onto two parchment-lined baking sheets.
- Chill the Dough:
- Freeze the cookie dough balls for at least 60 minutes or refrigerate overnight if you have time.
- Bake the Cookies:
- Preheat the oven to 375°F.
- Place the cookies on the middle rack of the oven and bake for 18-23 minutes, or until the edges are golden brown.
- Cool and Serve:
- Remove the cookies from the oven and let them cool on a wire rack for 5 minutes.
- Enjoy warm, ideally with a scoop of vanilla ice cream.
