Lemon Oreo Truffles

Ingredients:

  • 36 lemon Oreo cookies
  • 8 ounces cream cheese, room temperature
  • 1 tablespoon lemon zest
  • 1 1/2 cups white candy melts
  • 1 1/2 cups yellow candy melts

Instructions:

  1. Crush the Oreos:
    • Use a food processor to crush the lemon Oreo cookies into fine crumbs.
  2. Mix the Truffle Filling:
    • In a mixing bowl, beat the Oreo crumbs, cream cheese, and lemon zest together until well combined and smooth, with no visible lumps of cream cheese.
  3. Form the Truffles:
    • Roll the mixture into 1-tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
    • Freeze the truffle balls for at least 30 minutes or overnight for best results.
  4. Melt the Candy Coating:
    • Melt the white and yellow candy melts according to the package instructions.
  5. Coat the Truffles:
    • Dip each frozen truffle ball into the melted candy melts, one at a time, using a fork to tap off any excess coating.
    • Place the coated truffles back on the baking sheet.
  6. Decorate the Truffles:
    • Transfer the remaining melted candy melts into a piping bag. Drizzle over the coated truffles in a zigzag pattern for decoration.
    • Refrigerate the truffles for about 5 minutes to set the coating.
