Lemon Oreo Truffles
Ingredients:
- 36 lemon Oreo cookies
- 8 ounces cream cheese, room temperature
- 1 tablespoon lemon zest
- 1 1/2 cups white candy melts
- 1 1/2 cups yellow candy melts
Instructions:
- Crush the Oreos:
- Use a food processor to crush the lemon Oreo cookies into fine crumbs.
- Mix the Truffle Filling:
- In a mixing bowl, beat the Oreo crumbs, cream cheese, and lemon zest together until well combined and smooth, with no visible lumps of cream cheese.
- Form the Truffles:
- Roll the mixture into 1-tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
- Freeze the truffle balls for at least 30 minutes or overnight for best results.
- Melt the Candy Coating:
- Melt the white and yellow candy melts according to the package instructions.
- Coat the Truffles:
- Dip each frozen truffle ball into the melted candy melts, one at a time, using a fork to tap off any excess coating.
- Place the coated truffles back on the baking sheet.
- Decorate the Truffles:
- Transfer the remaining melted candy melts into a piping bag. Drizzle over the coated truffles in a zigzag pattern for decoration.
- Refrigerate the truffles for about 5 minutes to set the coating.
